Veggie Curry with Quinoa!

1 c. quinoa
1 sweet potato, diced
2 carrots, sliced
2 c. green beans, cut in half
1 onion, diced
15 oz. chickpeas, drained and rinsed
2 c. vegetable broth
1 c. light coconut milk
1 T. curry powder
1 t. cumin
1 t. basil
1 t. cayenne
1 t. cinnamon

Mix all ingredients in a slow cooker and cook on high 3-4 hours or low 7-8 hours.  Enjoy!
