Curried Cauliflower Soup!

1 onion, diced
2 cloves garlic, minced
5 c. cauliflower florets
3 1/2 c. almond milk
1 T. curry powder
1 t. black pepper

Combine all ingredients in a slow cooker.  Set on low for 10 hours or low for 5 hours.  Puree with an immersion blender
