Apple Sauerkraut Sausage Skillet!

1 T. olive oil
4 Italian (veggie) sausage links, sliced
2 apples, cored and diced
1 c. sauerkraut, drained
1/4 c. dried cherries
1 t. black pepper
1 t. Italian seasoning
1 T. Dijon mustard

Brown sausage in olive oil in a large skillet.  Add apples and cook until softened.  Stir in sauerkraut, cherries, and seasonings and cook for an additional 2 minutes.
