Eggs Florentine with Avocado Sauce!

2 eggs, poached
1 English muffin, split and toasted
1/4 c. spinach, sauteed
2 slices tomato
1 avocado
1 lemon, juiced
1/4 c. hot water
1/4 t. black pepper

Top toasted muffin halves with sauteed spinach and tomatoes.  Place a poached egg on top of each half.  Puree avocado with lemon and hot water in a blender and spoon over the top.  Season with black pepper.
